Spring Is Blooming! And So Is Easter at Aria’s Cakes

Spring arrives gently. The days grow longer, blossoms begin to appear, and there is a quiet feeling that everything is waking up again.

For me, this time of year has always been tied to the weeks leading up to Easter, the time of Lent, when preparations slowly began for Easter Day.

Back home, the end of Lent meant a joyful return to celebration, and there were many rituals that filled the kitchen with anticipation. The Schiaccia di Pasqua would be prepared, filling the house with its sweet, spiced aroma. Fresh pasta was rolled by hand on the table to make tortelli. There was the careful search at the butcher for the best meat, and choosing the right vegetables to fry alongside it.

Among all these preparations, one of the simplest and most fun activities just before Easter, was decorating boiled eggs using herbs from the garden.

We didn’t use food colouring, just what nature gave us. Sage leaves were perfect for it, growing abundantly and freely. A leaf would be placed carefully against the shell, the egg wrapped in old nylon tights to hold it in place, and then boiled in water with a few drops of vinegar. When unwrapped, the delicate imprint of the leaf remained on the shell, each egg slightly different, simple and beautiful.


That same spirit of tradition and handmade care continues at Aria’s Cakes today.
