We start planning as soon as Christmas is over

Most people pack away the decorations, exhale, and move on. For me, that’s when the next season quietly begins.


As soon as Christmas ends, I start noticing. Making notes. Saving ideas. Paying attention to the small things, what people loved most, which flavours felt like home, what got shared first at the table, what made someone reach for a second slice.


During the season, I’m already taking note of feedback, listening closely to customers, and gathering those little insights that matter. Then, as soon as January arrives, that’s when the real planning begins! Testing, refining, and dreaming up what’s next.

Not in pursuit of perfection for its own sake, but with people in mind: families, friends, hosts, those creating traditions, and those holding onto them.

Freshly ground spices make all the difference

This is one of those small details that changes everything.

Most of my spices are freshly ground.

Cinnamon, cloves, nutmeg, ginger, cardamom; to me, they’re not just ingredients. They’re memory-makers. And here’s the honest behind the scenes part: when I’m grinding them, I wear a mask.


Because the aroma is so intense, so alive, it fills the air all at once. Without it, I’d genuinely feel a bit “spice-high”, like my senses are turned all the way up. It’s funny, but it proves the point.

Freshly ground spices hold onto their natural oils, and that’s where the depth, warmth, and character live. Once pre-ground spices sit for too long, they slowly lose that spark.

Sometimes it’s the smallest choices that create the biggest feeling, that moment when you open a box and pause, just to breathe it in.

That scent is part of the experience too.

If you know Aria’s Cakes, you’ll know we love gingerbread. Rooted not only in tradition, but in my own story: I’m Italian, but I grew up visiting family in Switzerland and Germany, where those magical festive flavours and village scenes first captured my heart.

What you might not see is how much we explore it.


We’re drawn to flavoured gingerbread, the kind that still feels nostalgic and familiar, but with a twist that makes you pause… and then go back for another bite.

A favourite is our Brandy Cranberry gingerbread. Warming, slightly bold, and layered, like the flavour tells a story.

And we don’t stop there. We’re always testing, always exploring new combinations, always asking: what else could this become?


Because baking, at its heart, is never finished. There’s always another idea, another layer, another way to make something familiar feel new again.

Nothing arrives on the menu after just one try.

Every cake, biscuit, and gingerbread flavour has been tested again and again before it feels right.


Sometimes it’s a small shift, a spice balance, a texture, the way the sweetness settles. Sometimes it’s something you can’t quite measure, just a feeling that it’s not there yet.

Because the goal is never just: this tastes good.

The goal is: this feels like something you’d want to share.


Because baking isn’t the end of the story, it’s the beginning of one. A table. A cup of tea. A winter evening. A gathering. A long-overdue catch-up. A quiet moment that turns into a memory.


That’s what I’m really baking for.



Christmas in July is our test run, Christmas is the full swing

Christmas is our busiest season, without question. But Christmas in July plays an important role. By then, our products are ready to step into the world. We get to listen, to what people love, what they crave, what they come back for.


It’s when the season starts to hum. And by the time Christmas arrives, we’re not guessing.

The flavours are refined. The favourites are clear. The timing is sharper. We step into the busiest time of year confident in what we’re bringing to people’s tables.


The part I care about most can’t be measured

Yes, we work hard to make everything just right, but always with people in mind.

Because the things that truly matter can’t be measured. Not in numbers, not in checklists, not even in a “perfect” recipe.


They show up afterwards. In people lingering a little longer. In c0nversations that stretch into the evening. In something sweet becoming part of a memory.


That’s the heart of Aria’s Cakes. And it’s why, the moment Christmas ends, we begin again.
